Slow-Cooker African Groundnut Stew with Chicken
Ingredients
- 6boneless skinless chicken thighs (about 1 lb)
- 3boneless skinless chicken breasts (about 3/4 lb)
- 1medium onion, chopped (1 cup)
- 3/4cup peanut butter
- 1can (28 oz) Muir Glen™ organic diced tomatoes, undrained
- 1 3/4cups Progresso™ chicken broth (from 32-oz carton)
- 2tablespoons grated gingerroot
- 2tablespoons tomato paste
- 2teaspoons curry powder
- 1teaspoon crushed red pepper flakes
- 1/2teaspoon salt
- 1 1/2lb sweet potatoes (3 medium), peeled, cubed (about 4 cups)
- 1lb small red potatoes (about 12), cut into eighths (about 2 1/2 cups)
Steps
1 Spray 5- to 6-quart slow cooker with cooking spray. In cooker, layer all ingredients, spooning peanut butter in dollops.
2 Cover; cook on Low heat setting 8 to 10 hours. Break up chicken before serving.
